Spanish Style Churros

In Spain’s churrerías, churros come to your table on a small plate with sugar packets to sprinkle on to taste. When ordered with chocolate, they’re served with a spoon in case you want to finish the chocolate after dipping your churros.

We serve Churros with Chocolate for dessert at Txoko. The sweet fried dough is especially welcome at a Spanish-themed dinner party. Serve after big helpings of Seafood Paella and, of course, with plenty of Sangria to go around.

The History of Paella

Valencia, in eastern Spain, is the undisputed home of paella. This region boasts one of the largest natural ports in the Mediterranean and has been a major rice-producing area since the Moors introduced rice over 1,200 years ago. In fact, the Spanish word for rice, arroz, comes from Arabic, not Latin like most Castilian Spanish words.

​The name paella actually refers to the pan itself, not the dish. Derived from the Old Valencian language (similar to Catalan), it likely stems from the Latin word patella, meaning "pan." However, there are other charming, if less likely, theories about its origins.

In Spain, paella is more than just a meal—it’s a social event. Families gather in restaurants, holiday homes, or outdoor picnic spots to enjoy it together. Paella competitions are common, and giant paellas often take centre stage at festivals and fiestas.

Jamón Ibérico/ Iberico Ham

is a prized Spanish cured ham from the black Iberian pig, known for its rich marbling, complex flavor, and nutty taste from acorns (bellotas) the pigs eat, with classifications based on breed purity and diet (acorn-fed vs. grain-fed) and a lengthy aging process that makes it a gourmet delicacy.

According to Spain's denominación de origen rules and current regulations on jamón, the dry-cured jamón ibérico must be made from either pure breed Black Iberian pigs or cross-bred pigs at least 50% Black Iberian mixed only with Duroc pigs, the same restriction as required to keep official ibérico denomination on any Spanish pork meat product.

Jamón ibérico, especially the one labeled de bellota, has a smooth texture, rich, savoury taste, and regular marbling.
